What is a girl to do when she has oranges needing used up?
Make some cakes! It’s so obvious!
Historically, I haven’t been a fan of Jaffa cakes . But it’s
getting wintery and nothing beats a chocolate and orange combination on an
autumn evening. Plus, everyone knows that chocolate oranges are one of the
unofficial chocolates of Christmas, so these flavours fit right in.
This is one of my favourite kinds of cakes to make, it’s
super easy, the topping is sweet and tangy, and the chocolate piping is
actually a lot of fun to do.
Makes one delicious cake, divides into 36 little bite size squares
Ingredients for the
Cake
- 140g butter
- 200g caster sugar
- 3 eggs
- 200g plain flour
- 2.5 tsp baking powder
- 90ml buttermilk
- Zest of 2 oranges
Ingredients for the
Topping
- 3 tbsp freshly squeezed orange juice
- 2 tbsp honey
- 25g sugar
- 50g dark chocolate
Method
Preheat the oven to 180 degrees, and grease and line a
square baking tin.
Beat the butter and sugar together.
Add the eggs, one at a time.
Mix together the flour and baking powder and add to the
bowl, stirring well.
Pour in the buttermilk and mix to a smooth batter. Finally,
stir through the orange zest.
Pour into the prepared tin and bake for 25 minutes until
golden on top.
Near the end of the cooking time, prepare the sweet orange
drizzle. Heat together the orange juice, honey and sugar in a small saucepan. Gently
heat until the sugar has dissolved.
When the cake is cooked, remove from the oven and poke a few
holes in the top with a chopstick. Pour over the drizzle, and remove to a wire
rack to cool.

When the cake is cooled, melt the chocolate and place in a
piping bag. Pipe whatever crazy pattern you feel like on top, or just drizzle
it randomly.
Allow the chocolate to set, then chop and serve!
