It’s that time of year again! Everything is pink and there
are hearts everywhere. And then on Feb 15th the frugal ones can score some half off chocolates.
Stage 1 - baked |
I don’t really “do” Valentine’s – this year me and the Swede
are getting a Chinese takeout and calling it a day. But I do love any excuse to
bake pretty things, so I decided to do a baked version of the strawberry (“Homer
Simpson”) donuts that I made a few years ago.

Because I’m obsessed with baked donuts.
And you will be too. If you do presents for Valentine’s, ask
your other half to buy you a donut pan. You won’t regret it.
Stage 3 - strawberry glaze and sprinkles |
These are really simple to make, and feature a cheeky double
glaze (plain/classic and strawberry/pink). Feel free to halve the glaze
ingredients if you don’t want to double dip. But sugar = love, so I dipped
twice.
Makes 8 donuts
Ingredients for the
donuts
- 130g plain flour
- ½ tsp baking powder
- ¼ tsp bicarbonate of soda
- Pinch salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 30g caster sugar
- 30g granulated sugar
- 1 tbsp vanilla sugar (or 1/2 tsp vanilla extract)
- 120ml buttermilk (or half milk half yogurt, or regular milk with a few squeezes of lemon juice)
- 1 egg
- 30g melted butter
For the glaze
- 60ml milk
- 300g icing sugar
- 2 strawberries, diced
Method
Preheat the oven to 175 degrees C.
Mix the flour, baking powder, bicarbonate of soda, salt,
spices and sugars in a bowl and set aside.
In a smaller bowl, whisk together the buttermilk and egg,
then pour in the melted butter.
Make a well in the dry ingredients and pour in the wet
ingredients.
Stir briefly until just combined.
Grease your donut pan and put the batter in a piping bag.
Fill the donut holes about 2/3 full.
Bake for 10 minutes until risen and golden.
Remove from the tray carefully, I use a plastic knife to run
around the outside of the donuts and they usually just slide out.
Place on a cooling rack while you get on with the glaze.
Whip up the glaze by heating 220g of the icing sugar and
milk in a small saucepan, stirring until smooth.
Take off the heat. Remove half of the glaze to a separate bowl and sieve over
the chopped strawberries to release the juice. Add in the other 80g of the icing
sugar to thicken it a bit to counteract the strawberry juice thinning the glaze
out.
Mix well to make your pink glaze.
Dip the donuts in the white glaze first..
...and set on the cooling rack (lined with greaseproof paper).
Once they’re all done, give it about 15 minutes (until the
glaze has hardened enough to handle easily) before dipping in the pink glaze.
Sprinkle over some pretty edible sprinkles/glitter/hundreds
and thousands and allow to set before eating!
