Okay, I added a bit of everything for these bad boys. And they’re PERFECT.
Take a cookie. Add peanut butter. Sprinkle over some
coconut. M&Ms? Sure, they can join the party. Chocolate chips go without
saying.
YES. GET IN MY MOUTH.
Ingredients
- 115g butter
- 100g granulated sugar
- 50g demerara sugar
- 185g peanut butter
- 1 large egg
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 160g plain flour
- 40g dessicated coconut
- 100g chocolate chips
- Most of a sharing bag of M+Ms (the rest for eating)
Method
Preheat the oven to 175 degrees C.
With a handheld whisk, mix together the butter and sugars
for a few minutes until soft and creamy. Add the peanut butter and mix again.
Then throw in the egg and do it again.
Fold in the bicarbonate of soda, flour and salt. Then stir
in the coconut, followed by the chocolate chips and M+Ms.
Take a small handful of dough and roll into a ball, place onto lined baking trays and flatten slightly. You can dot a few more M+Ms on top if you haven't eaten them all.
Stick in
the oven, bake for 15-18 minutes until golden and cracked and gorgeous on top.
Let cool the respective tray for 10 minutes then move
to a wire rack to finish cooling.
They keep for a week but they won't actually hang around that long. Because they're insane.
