Where has this been all my life?!
Seriously, this stew packs an epic punch. Forget greying
mince and lacklustre gravy, this is a stew like nothing this Irish chick has
eaten before. Thick, flavourful, meaty and amazing. The beans are a perfect antidote to the rich chorizo.
The other bonus is that it is so easy to make, making it the
perfect work-night, cold-evening dinner. It's what I'm having tonight, and you should too!
serves 2, with leftovers
Ingredients
- 1 tsp olive oil
- 1 red onion, diced
- 2 garlic cloves, minced
- 1 red pepper, sliced
- 4 chorizo sausages, sliced
- 250ml pasatta
- 75ml red wine
- 1tsp paprika
- 1 tsp oregano
- 400g tin butterbeans
Method
Fry the onion in oil for a few minutes and add in the garlic
and pepper and fry until softened, making sure not to let things burn.
Add in the chorizo and cook for 5 minutes until cooked
through and everything has that delightful orange colour that chorizo brings.
Pour in the pasatta, red wine, paprika and oregano and stir. Mix through the beans, bring to the boil and simmer for 20
minutes until thickened and smelling amazing.
Serve with thick crusty bread, or new potatoes. On its own
is pretty good too.
