Blueberry Crumble Muffins




What do you do when you find 500g of blueberries in your fridge? MAKE MUFFINS (and meal prep some fruit salad).



I always think muffins can be a bit cloying, so I try to lighten mine with some buttermilk, and I think topping them with a little spiced brown sugar crumble adds textural interest.



These are crazy easy to make (and eat!) and I am willing Spring weather to come out and stay out by trying out some fruity bakes.

Bakewell Crumble Muffins


On a cold wintery Sunday, these are just the ticket.

I am particularly proud of these bad boys. I was feeling in the mood for something a little almond-y, a little sweet, a little fruity.. And well hello here is something to tick all the boxes.



Crumble is the best invention. It’s amazing with custard, but that’s not an “on the go” snack. This is my version of a portable crumble with a bakewell twist and I’m rather pleased with myself for having concocted it.

Banana Peanut Butter Muffins




I'm post-nightshift and I feel like a zombie. I would be feeling worse if not for these little lifesavers, gratefully gorged on at 4am.

We’ve all been there. It’s the start of the week, and you have a bowl of rapidly browning, sad looking bananas left over from last week's shop in your fruit bowl. Sure, you could just eat them, but that feels like punishment. Instead, I'm going to give those bananas a fitting send off,

So, I decided to combine some of my favourite flavours and make some lovely muffins! These are really delicious, filling and flavourful. They make a very treat-ful breakfast. And are great for elevenses. And lunch-dessert. And midnight snack.



Peanut butter and banana really go well together and the hint of cinnamon just ties the whole thing together. The crumble topping really makes these muffins into something very, and you gotta make them to see for yourself.

Cheeseburger Cupcakes

Ta-daaaaa!


I am a big fan of the TV show Bob’s Burgers. But, I prefer to bake. So this is my homage to Bob, who always names his burgers with a (sometimes cheesy) literary/pop culture reference.  



I have been wracking my brains trying to think of something clever to name these brownies as Bob would, and I can’t come up with ANYTHING. I am not creative. I have failed. Answers on a postcard.



I have another confession to make. I am kind of terrible at making things look pretty. I promise you, my food *tastes* great, but I can’t always get the cake to rise evenly, or ice things beautifully. My ganache always slips a bit, and my cupcakes always rise a bit too high in the centre. BUT! I wanted to give these a go. And I’m glad that I did, because I think they turned out pretty cool.



I already have great recipes for muffins and great recipes for brownies, so I have recycled those, if it aint broke don’t fix it.

Jammy Muffins


I am currently on my jolly holidays in Belgium! It is great here - I can't wait to make waffles and proper frites when I get home! I have also been stuffing my case (and face) with enough chocolate to live on for a year. I really don't see anything wrong with that.

But enough about chocolate, this post is all about the above delicious muffin donut thingys, Let’s first address the name of these little morsels. They’re a bit like a muffin and a bit like a donut. But Doffin sounds dumb and (for me) evokes the unholy combination of a dolphin and a puffin. And the less said about Muffnut the better..

This is one of the recipes that I love. It is quick, simple, uses ingredients I always have hanging around the kitchen, and most importantly they look and taste pretty impressive.

I was really happy with how these turned out- perfect little sugary domes of deliciousness with a surprise of sweet fruity jam inside. An absolute winner.

Apple Crumble Muffins



These are my favourite muffins ever. Bold statement, attention grabbing.

I suppose we are in Autumn then! I think that is probably my favorite season for flavours. I love the delicate spices and sweet fruits that define the season for me.

And I think this muffin defines the season's best flavours, from the slightly tart apple and scented cinnamon, coupled with the crunchy, sweet crumble which is just perfection. The cake portion of these is also perfect for a muffin: springy, light, but still dense.

In short, these are muffin heaven. You need these in your life.



Don’t worry if you don’t have a food processor for the crumble, in that case just rub the flour and butter together until you get coarse breadcrumbs, and stir through the sugar and some chopped nuts (or you can easily leave the nuts out).

Banana, Hazelnut and Nutella Muffins





Do you ever just want to make something really tasty and filling, that is sweet but still flavourful?


Look no further than these muffins. No-one hates Nutella, and the banana and hazelnuts add a real depth of flavour, taking it away from being too cloying and sweet. I did eat one for breakfast. I don’t exactly recommend it, health-wise, but it was great.



I don’t trust muffins which use butter, because they are never quite moist enough. So when making a muffin recipe I am looking for oil/milk/buttermilk instead to get the fat/liquid content needed.
