Za'atar Dinner Rolls


It's a bold statement, but I think my all-time favourite spice mix is Za'atar. I think I've obsessed over this since encountering it for the first time in Beirut last year (oh, travel eating.. how you are missed). It's thyme, it's sesame, it's herby and nutty and a little bit tangy and I found it in Morrison's spice aisle so it isn't unknown to the UK!


I add it to every pizza dough I make, I throw it into any meat I marinade for a shawarma meal, and I haven't made a loaf without it since finding some. In lockdown, this is what I stockpiled. I am obsessed.

When I saw these little za'atar rolls, I pretty much made them for dinner the following day. 



So good. Make them now.

Creamy Peppercorn Sauce




Sometimes you just get weird cravings for stuff. I was never really into peppercorn sauce until recently, and the other day I just HAD to have some. I didn't have steak or anything on hand, but I had all the ingredients for peppercorn sauce, so I roasted some chicken and threw it on top.

The next time, I would serve this my absolute favourite way - potato bread on the bottom, sliced steak on top, sauce all over.

There's not really many pictures of this because it's just that easy. Put everything in a pot. Cook it for a bit. Pour it over food.

Japanese Milk Bread Loaf




Okay I hope you lovely people are finding yeast because you have to try making this bread.



This dough is obscene. It’s silky and smooth. It is a dream to work with and cooks like a dream. This reminds me of a brioche dough, but with a traditional roux starter, or tangzhong.

This is a little time consuming but really is my ideal way to spend a weekend. It would also make amaaaazing French toast which is a great Sunday brunch food.

Vareniki - Russian Mashed Potato Dumplings




My favourite thing about travelling is eating new cuisines. In Russia last year I was super hungry and late one evening we stopped into a little diner. I ordered what is basically a bowl of comforting delights - mashed potato wrapped in dough. Perfection. Carbs on carbs, my kind of cuisine.



I have been meaning to make these for AGES but honestly, folding dumpling wrappers can be a little bit tedious. Then I saw a thing. A gadget. The coolest thing ever!

So this was an absolute breeze. Easy, delicious and kind of quick for dumplings! I don't think my recipe is strictly traditional but it was really really good. Usually you'd just have this on your own but I served it with some sausages for a little extra protein.

No Knead Bread




I’m going to make a confession. I really like kneading bread. I don’t understand when people want to do less kneading.

So I’ve always ignored these no knead recipes. But I got sucked in the other day, browsing bread recipes in lockdown, as we all are. I saw some pictures of some bread that just had the best crust and looked artisan-bakery perfection.

It was no knead. I gave it a go.

And it turned out GREAT. The best part is that it takes almost no time to prep the dough, then you can leave it in the fridge for up to 7 days before baking! This means I can have fresh bread in the morning. Don’t underestimate how wonderful that is.



The secret of the crust is the steam generated from cooking it in a pre-heated lidded dish. Magical.

Za'atar Tear and Share Bread




I’ve definitely waxed lyrical about za’atar before – it’s an incredible spice mix that I first had, smeared on fresh flatbread, in Beirut. When I travel, my souvenirs are food related. I love exploring the cuisine of new places and then trying to recreate it at home.



And I love bread. But I find flatbread difficult. Enter, the simple and delicious tear and share loaf, made in a bundt cake tin. Now I’ve mainly seen sweet recipes for this kind of bread (cinnamon, caramel etc) but the savoury one piqued my interest.

I served it with falafel and some gyros-style chicken but it would be great as a snacky dinner centrepiece with an onion-garlic dip.

White Boule




I don’t know about you, but I have never had the patience to even read to the end of a recipe for a sourdough starter. Needless to say, I haven’t attempted to make my own.



Buuuut this recipe uses a mini starter which is easy to prep, doesn’t take weeks of feeding, and gives a chewy, tangy, delicious white loaf. Too delicious. Fresh from the oven, it’s perfect. A few days in, toasted and slathered with peanut butter – also perfect.



The weather is turning colder, and the smell of freshly baked bread always cheers me up. If you have a day where you're hanging around the house, I can think of no better recipe to make.

Cheesy Stuffed Chillies





Ooh, I like all of these things. A bit of spice, a bit of cheese, some delicious smoky spices.



These are a great little side/snack. The original recipe called for jalapenos which I couldn’t find. So I got padron chillies which are a little smaller and just with a little spice kick. I think bigger chillies could be better because you can stuff more delicious couscous filling in them. You could even use sweet peppers if you have a spice-hater at home.

Basil, Mozzarella and Garlic Loaf



Ooooh baby this is a good one.

You’ve got an easy peasy bread recipe, with unlimited filling options, AND it looks super pretty.




I went with nice Italian style flavourings, but this could be delicious with some onion, garlic and sage instead, or ramp up the cheese, and add some sundried tomatoes. Oh, OH or smear with pesto and cover in mozzarella and parmesan.



I will be whipping up variations on this for a long time. I love finding that perfect base recipe to riff off.

Baked Onion Bhajis





These are an amazing side dish to curry. I don’t like deep frying things usually, so when I stumbled across the possibility that you could bake bhajis, I was on it like a car bonnet. The only slightly difficult ingredient to source was the chickpea flour - but I just blitzed some dried chickpeas in the food processor



These are really simple to make, delicately spiced, and an absolute treat. To be honest, next time I might double the recipe and smother the curry directly on top of this and ditch the rice.



Also, full disclosure, I was too excited to eat these so I didn't get any pictures of them plated. Because they were already on my fork and in my mouth.

Sweet Potato and Rice Croquettes



Crunchy, sweet, and filling, I’m kind of in love with these little flavour bombs. 

So, my love of the sweet potato must be boring everyone by now. Each time I post a new recipe, you must be thinking, finally, she’s found the absolute last way to cook a sweet potato. And then I post another!



So, in my search for more ways to utilise this most versatile of tubers, I came across the idea for these delicious croquettes, perfect for a side eg at a barbeque with some sweet chilli sauce, but I really liked mine alongside some curry, the saucy spiciness really complements the sweet crunchiness.

Sort of like a hash brown IN A DREAM WORLD.

Pita Bread


It has been thundery and rainy most of the day and that is scheduled to last over the weekend. So what better use of your time than to learn to make pita bread! The muggy weather is perfect for getting the dough to rise, too.

This couldn’t be simpler! Even if you don’t regularly bake bread, this is still very achievable. The method for making the dough is fairly standard – add wet to dry, kneed a bit, allow to rise, knock back, shape and bake.

I like the seeded aspect – Nigella seeds would be scrummy, but I only had poppyseeds to hand. Next time I might make them with sesame seeds and a little sesame oil. Pita breads are amazing dipped in curry, but you could also fill one with honey sesame chicken for a delicious lunch.

Greek Feta and Red Pepper Dip




In need of a little mid week treat?

You all know I have a complete love affair with Greek food. It is everything Irish food would be if we had a better climate, I think.

Dips from the shop never stand up to the ones you make yourself, and I always prefer to make my own. So when a dip is as easy to whip up as this one, you’ll never look back. Really, there’s no way to make this more complicated than throwing ingredients into a food processor.

Served with warm pita bread it’s a meal all of its own, but it is also delicious as a little side to a Greek feast.

Yemista - Stuffed Greek Peppers



Countdown to the weekend is on! Well, not for me, because I'm working this weekend. Feel for me.

But don't feel too bad, because I made these for dinner and they're amazing. You gotta try these. I have been trying to branch out on my side dishes, and I often get inspiration from food I try in restaurants.

After I had eaten them, I just knew I had to recreate these amazing stuffed peppers that I had in my favourite Greek restaurant. I have made some changes to the traditional recipe as I am wont to do.. Traditionally, as far as I can tell, you tend to include sultanas and mint, but I don’t like sultanas and I think mint can be overwhelming in savoury dishes. I also pre-cooked the rice a little because I only had brown rice and my boyfriend is very fussy with the way his rice is cooked.

Delicious filling!


These are great as a side, or on as part of a  little snack-y tapas feast!

Tear and Share Cheesy Garlic Bread


Okay, I know that it's Easter, which basically means chocolate season. And I am all about the chocolate. I don't do much sweet Easter baking because I'm too focused on yumming chocolate eggs into my face.

But if you're anything like my family, Easter is a time for people to come together and eat. So I've found the perfect side for your Easter buffet. Everyone does an Easter buffet, right?

It is an acknowledged truth that everyone loves garlic bread.

It’s like the universal amazing starter/side – carbohydrate-loaded, highly flavoured, a wee bit greasy.. It ticks all the boxes.

But, like all awesome things, it is also ridiculously decadent and should really be saved for special occasions. Oh, hello, Easter.

This bread is really really simple to whip up. It takes a little time while you’re allowing the dough to rise, but that’s good if you’re also cooking lots of other things at the same time. This is why it is the perfect dish for a party, imagine throwing this down in the centre of a table – people would be so happy.



Serves.. well, it makes about 24 individual garlic bread balls. So that could serve 2-12, depending on how much the people at your table love garlic bread. I'm not judging.

Butterbean, Pasta and Pesto Salad



What are Mondays for, if not starting off with good intentions?

I’m not a big salad fan, but I do like butterbeans, pesto and pasta a great deal. So I decided to whip something up that would be a bit more interesting (and better for me) than a ham sandwich lunch.

This is really simple to make, and can easily be made out of leftover pasta if you happen to have made too much (which always, constantly happens to me). I am using my homemade pesto, but feel free to use any that you like. It takes 2 seconds to whip up, makes about 4 portions, and makes meal prep reeeeeally easy.

Feel free to play around with the flavours, or leave out the pepperoni to keep veggie. Speaking of veggies, I have a fairly limited repertoire of ones I actually like, so I’m happy with what I’ve put in, but feel free to go wild and add tomatoes or carrots or whatever you crazy salad-lovers fancy.

Red Pepper Butterbean Dip



I have ABANDONED the blog while I'm on my holidays, I'm so sorry.

Just dropping in to post this dip, a perfectly summery thing. There is something about it which just calls to be eaten outdoors, on a table filled with yummy dips, hummus and pate. For me, that's better than dinner, the nibbles that come beforehand. Especially with an aperitiv or two!

This is a really simple but effective dip that can be whipped up in a hurry. It is a great accompaniment to Middle-Eastern style dinners, but just as good with some tortilla chips dipped into it. It’s nutty and slightly tangy, delicately spiced and an all-around good dip.

I buy a lot of butterbeans with good intentions, so my cupboard is always full of them.  I have a tendency to over-buy all kinds of beans (like 3 tins with every grocery shop) because I never check what’s in the cupboard beforehand, and I’m deathly afraid of running out of beans. If there’s ever a zombie apocalypse, come to my house. There’s beans to last us YEARS.

Touch wood, there’s no sign of zombies coming (I’ve not got red on me), so I’m always looking for ways to use them up in new and delicious ways. And this makes a nutritous and delicious dip.

Cauliflower Rice



I am incredibly out of my comfort zone here. What has led me down to the dark valley of rice substitutes, avocado pudding, and ALMOND MILK EVERYWHERE?

Well, it started off with doing a detox for 14 days. And that meant no carbs. No rice, no bread, no noodles, no muffins, no cake, no biscuits, no brioche, no NOTHING. I’m not going to lie, I was really upset. And slightly dizzy. And INCREDIBLY HANGRY ALL THE TIME.

I made it 48 hours with no carbs. This was a part of it.

It’s no secret that I love rice. I could happily eat only rice with a bit of curry sauce or peri-peri mayo for the rest of my life. Dip a tortilla wrap in it and I would be in heaven.

What I’m trying to do is to is make better choices, and exposing myself to things that I otherwise wouldn’t even think about trying. I can then incorporate the healthy stuff that still tastes good into my everyday diet. Now, I’m only on day 2, and so far I know that cauliflower mash is pretty edible. And something that all the crazy health bloggers like is cauliflower rice. So, I’ve gone from buying one cauliflower EVER in my life, to buying two this week.

I won’t lie, I can taste a good deal of the cauliflower still, but eating it with a curry mitigates that somewhat. I didn’t love this. I hate posting stuff that I’m not in love with, but my Swedish boyfriend really liked it, so I’m going against my instincts and sharing it.

It is incredibly easy, which isn’t always the case with these “healthy” alternatives. Feel free to experiment with spices, or throw in some fresh garlic when you’re blitzing it. This thing can take on a lot of flavour.

Baked Cauliflower Mash



It is a testament to my Irish upbringing that it is only now that I realise that you can mash vegetables other than potatoes.

Of course, we all had carrot and parsnip mash at the Sunday dinner table, but who really even ate that when there were spuds on offer?

Let's get real though. It is hard to get overly excited about cauliflower. But put away your prejudices and give it a go! It is tasty, filling and wholesome, and way fewer carbs than spuds. And it really is pretty tasty!

Stick in on your Easter Sunday table today and you won't be disappointed.
