Hazelnut Rocky Road




Some people complain about the current heatwave that we are having, but I LOVE it. The only thing that is a little difficult is cooking things in the oven because the kitchen gets slightly sauna-like. So here's a no-bake traybake- a super sweet and nutty rocky road.

You know I can’t help myself adding Nutella and nuts to everything. And traybakes are no exception! Nutella is smooth and creamy and delicious and basically, once I realised that you could sub out some chocolate and butter for a little Nutella, my baking world became a little larger.



These are great little squares, perfect for making with little ones as there's not much heat or cooking involved. I think they make a very cute addition to a party table or are also great for taking into work. 

They're very sweet and a little crunchy and a little chewy and very, very delicious.




Ingredients
  • 75g softened butter
  • 200g dark chocolate
  • 175g nutella
  • 3 tbsp golden syrup
  • 200 g rich tea biscuits
  • 75g mini marshmallows, or normal ones chopped into pieces, with more for on top
  • 50g hazelnuts
  • 50g chocolate chips plus more for on top


Method

Melt together the butter, chocolate, Nutella and golden syrup, gently in a saucepan. Stir occasionally until all melted together.



Bash the biscuits into coarse crumbs (and some larger bits are ok) and add into a bowl alongside the marshmallows, hazelnuts and chocolate chips.



Pour over about 2/3 of the thick and delicious melted chocolate mixture and mix it all through so that all the dry ingredients are coated.



Press into a baking tray and place in the fridge for 15-30 minutes to set slightly.

Remove from the fridge and pour over the remaining melted chocolately mixture. Scatter a few marshmallows and chocolate chips on top and let set in the fridge for at least an hour.



Slice up and serve!
