Baked Passion Fruit (and Coconut!) Glazed Donuts

IT'S DONUT TIME AGAIN!

This is an excellent recipe for if you happen to have some passion fruit curd lying around. I realise that isn’t a cupboard stable for everyone (though it is delicious and ridiculously easy to make, so I don’t see why not). If you don’t, the pulp and seeds from a passionfruit will do perfectly well, but the flavour will be slightly more tart.

Personally, I love passion fruit and coconut together. Ever since I brunched on some amazing ricotta pancakes delicately dotted with passion fruit curd and coconut cream, I have loved this combo. It was life-changing.

Have you all bought the donut pan yet? I have used mine more this year than a muffin pan.

Let’s all hop on the baked donut train again! Choo choo!

Passion Fruit Curd

So, I'm kind of obsessed with curd now. Get with the program. It's spring, and I'm blitzing all of my fruit to make this amazing little compote. Basically, this means that I have a new ingredient to play with! Breakfast will never be the same.

Breakfast TRANSFORMED!

I’ve decided that fruit curd is the best thing ever. It all started with some amazing pancakes I got for brunch which were served with passion fruit curd.

I started off easy, making the simplest type of curd (lemon). It was super delicious, and very easy. I
used it on pancakes, and in cakes. The next step was to branch out into passion fruit curd because I found a local place to buy them – would you believe that Tesco’s sells passion fruits?!

The method for this is slightly different from lemon curd, but it produces the same smooth, zesty sweet preserve. Curd is really simple, really versatile and I am very pleased with my little fridge full of jars of homemade deliciousness.

Lemon Curd Sponge

I made lemon curd the other day. It had to be done, and it was delicious. I ended up with quite a lot of curd, and despite lovingly and liberally slathering it on pancakes most of last week, I still have a lot left.

Delicious, delicious lemon curd.

So, the obvious solution was to incorporate it into cake.

I decided to make a lemon Victoria Sponge. Instead of jam, I used the curd, and instead of cream, I used lemon buttercream. This was a stonking success. It's the perfect springtime cake, sweet and zesty, and the homemade curd makes a really standout filling.

Lemon Curd

I had some incredible pancakes the other day which featured passionfruit curd. I had never had any kind of fruit curd before, and I was sold!

I decided to dip my toes into the world of curd with its most famous type – lemon!

I had loads of leftover lemons from a party, and I got cracking almost immediately. It’s really simple to make and you probably have all the ingredients already.

Something that is good to know up front - making curd is EASY. If you can make custard from scratch then this is like its simpler cousin. When the mixture started to thicken up I was in raptures (I’m very easily pleased).

It made about 3x the amount shown here, it's just I only have tiny little jars..

There are plenty of curd inspiration recipes out there, but as well as in pancakes, I think it would be amazing spooned over meringue and topped with a little cream for a little zesty summer pudding. Or as the filling in an alternative Victoria sponge.

Next on my agenda, find passionfruits..
