Baked Passion Fruit (and Coconut!) Glazed Donuts




IT'S DONUT TIME AGAIN!

This is an excellent recipe for if you happen to have some passion fruit curd lying around. I realise that isn’t a cupboard stable for everyone (though it is delicious and ridiculously easy to make, so I don’t see why not). If you don’t, the pulp and seeds from a passionfruit will do perfectly well, but the flavour will be slightly more tart.



Personally, I love passion fruit and coconut together. Ever since I brunched on some amazing ricotta pancakes delicately dotted with passion fruit curd and coconut cream, I have loved this combo. It was life-changing.







Have you all bought the donut pan yet? I have used mine more this year than a muffin pan.

Baked Lemon And Poppy Seed Donuts




Alright, I'm totally in donut mode now.

There is something about baked donuts that sparks joy in people. Myself included. They always come up perfectly round and beautifully baked and it’s just pure deliciousness in the comforting shape of a donut. 

You do need a special tin (these are so essential to my life that I have two..) but I promise it is worth it! I don't love deep-frying food, and this is a perfect compromise to still allow donuts in your life if you're like me.



Basically the sky is the limit with these. I have done a few variations in the past (chocolate, strawberry, cinnamon), and it made sense to give it a go in lemon form!




The lovely glaze is easy to whip up, tart and sweet and makes a perfect addition to the spongy cakey goodness of the donut.

Makes approx. 16 donuts

Strawberry Glazed Baked Donuts!







I know which plate I want...

It’s that time of year again! Everything is pink and there are hearts everywhere. And then on Feb 15th the frugal ones can score some half off chocolates.

Stage 1 - baked


I don’t really “do” Valentine’s – this year me and the Swede are getting a Chinese takeout and calling it a day. But I do love any excuse to bake pretty things, so I decided to do a baked version of the strawberry (“Homer Simpson”) donuts that I made a few years ago.

Stage 2 - glazed once

Because I’m obsessed with baked donuts.

And you will be too. If you do presents for Valentine’s, ask your other half to buy you a donut pan. You won’t regret it.

Stage 3 - strawberry glaze and sprinkles

These are really simple to make, and feature a cheeky double glaze (plain/classic and strawberry/pink). Feel free to halve the glaze ingredients if you don’t want to double dip. But sugar = love, so I dipped twice.

Cinnamon Baked Donuts



Merry Christmas, everyone!

And since you’ve all been very good this year, I’m going to give you all a special treat.. What if I told you guys that you could go from zero to donuts in about 25 minutes?

I will give you that secret. It’s a Christmas miracle!!



These are the best donuts ever. They are so good that they make grown men jump up and down with glee. They are so good that I bought a SECOND donut pan so that I could make them more 
efficiently. Donut pan you say? Yes, these are baked in the oven, so you need a little mould to make the shape, but it's well worth it!

Simply put, they are wonderful and special and great and I love them. In the madness of the Boxing Day sales, try and source a donut pan – you will NOT be sorry. I got mine on amazon for less than a tenner and I WILL use it a lot.

DONUTS!

Lets go nuts, for donuts!

OMG, I love donuts. Is there anything that makes people smile more than a pile of donuts, getting your fingers sticky from the sugar-crusted goodness?

I had to give these a go, because I was procrastinating other things. Plus, I’ve never made donuts before and I wanted a challenge. They are not difficult, I swear. You just need some patience and common sense around boiling oil.



Everyone who knows me knows that mint and chocolate is my FAVOURITE. And I think part of the reason for that is because it reminds me of Christmas. Yes, orange and cinnamon and nutmeg and cloves are traditionally Christmassy flavours, but for me, it is all about the mint: After Eights, mint matchmakers, that minty box of Thornton’s chocolates. I never eat those unless they’ve been sitting under a Christmas tree for AT LEAST a week.

So, that’s why I’m serving up some mint chocolate realness. But just after I had finished making them, I had the bright idea that I could have put some cinnamon in the sugar coating and rolled the donuts in that. Next time.
