Creamy Bacon Pasta with Green Bits


This is one of my favourite midweek dinners, it takes a few minutes to whip up, uses ingredients I always have hanging around, and tastes delicious! We had it after a quick gym session, protein BRAH, and it was perfect. I feel like Jamie Oliver with my 10 minute supper.

It is infinitely adaptable for whatever you’ve got in the fridge. I really like it with leek and peas, but you could probably stir in some spinach or green beans instead of the peas. I just love peas. You may not.

serves 4

Ingredients
  • 300g pasta
  • 2 leeks
  • 4-6 rashers of bacon, sliced
  • 1 tbsp butter
  • ½ cup frozen peas
  • 100ml white wine
  • 100ml cream
  • 2tbsp parmesan cheese, plus an extra 1tsp to serve
  •  

Method

Cook pasta according to instructions.

Fry the bacon until browned, around 8 minutes.



Add in the leeks and butter, and stir well. Cook for 5 minutes, stirring to make sure nothing sticks and burns. There’s nothing grosser than charred leeks.



Throw in the frozen peas and stir in, cook for a few minutes.



Pour in the wine and simmer for a few minutes to reduce.



Then pour over the cream, and stir. Season and stir through the parmesan.




Pour in the pasta, and stir through well.

Serve, with a sprinkling of parmesan on top.





So delicious.
