Well, this is a little revelation! For Christmas, one of my lovely aunts got me a beautiful book full of cakes you can make in a mug and cook in a
microwave. Individual cakes, minimal preparation, many variations, any time you
want, with virtually no clean-up! ZOMG.
I was really sceptical at first, cooking a miniature edible
cake in only 90 seconds? WITCHCRAFT!
But it works, and works well! And while it is a quick and
dirty version of a cake, it would also be SUPER cute as an individual dessert.
I’m thinking dividing the recipe up into small/espresso cups and microwaving
for slightly less time.
Ingredients
- 30g butter
- 1 egg
- ¼ cup caster sugar
- 1/3 cup plain flour
- 3 tbsp cocoa
- ½ tsp baking powder
- 1 tbsp double cream
- 2 tbsp chocolate chips
Method
Couldn't be easier.
Melt the butter in a bowl in the microwave.
In a large-ish mug, beat the egg.
Stir in the sugar.
Mix through the melted butter.
Add in the flour.
Stir through the cocoa.
Add in the baking powder.
Mix through the
double cream.
Finally, add in the chocolate chips and stir well to
combine.
Stick in the microwave and cook for 90-110 seconds. It will
rise up over the rim of the lid, so be careful and keep an eye on it. The cake
will sink slightly when you take it out, don’t worry.
As soon as it has cooled slightly (a minute or two) eat!
