Everybody loves brownies. And, by transit of property,
everybody loves the person who brings
brownies.
I particularly love these because these really are "kitchen cupboard" brownies. We've all got a jar of peanut butter and some peanuts lurking in the back of the cupboard.
I’ve really been experimenting with all sorts of brownie types, because it is a basic recipe that lends itself so well to different flavours. We've had the
classic, the orange, the mint, so far.
These came about after I was googling “recipes
with peanut butter” as you do, and I couldn't believe that I hadn't considered
peanut butter brownies up until then. If you wanted to be really naughty, you
could easily throw in peanut m&ms instead of the chocolate chips and
peanuts. Not that I've ever done that. Ahem.
Ingredients
- 180g butter
- 200g dark chocolate
- 220g brown sugar
- 175g crunchy peanut butter
- 3 large eggs, beaten
- 100g plain flour
- 25g cocoa
- ½ tsp baking powder
- 100g chocolate chips
- 50g peanuts
Method
Preheat oven to 170 degrees and line a square tin.
Melt the butter and chocolate together, and mix well.
Add the sugar, eggs and peanut butter into a bowl and pour
over the still warm melted chocolate mixture.
Add in the flour, baking powder, cocoa and mix again.
Finally, stir through the chocolate chips and peanuts.
Pour into the prepared tin, and bake in the oven for 30
minutes, checking from 20 minutes.
Allow to cool in the tin, then slice into chunky squares.
